  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt. Set aside.
  3. In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Mix until smooth and add the dry ingredients until just combined.
  4. In another bowl, beat room-temperature cream cheese with sugar, egg yolk, and vanilla until smooth.
  5. Fill each muffin tin three-quarters full with batter and top with cream cheese mixture. Use a toothpick to create a swirl effect.
