  • 20 baby bell or cremini mushrooms
  • 2 tablespoons butter
  • 2 minced garlic cloves
  • ½ medium onion, finely diced
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 4 ounces softened cream cheese
  • ⅓ cup grated parmesan cheese
  • ⅓ cup roughly chopped pecans
  • ¼ cup finely chopped fresh parsley

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the mushrooms under cold water and remove the stems; finely chop the stems and set aside.
  3. In a skillet over medium heat, melt the butter and sauté minced garlic and diced onion until soft (about 3-5 minutes). Add chopped mushroom stems and cook until moisture is released (2-3 minutes).
  4. Remove from heat and mix in salt, pepper, cream cheese, parmesan cheese, pecans, and parsley.
  5. Generously fill each mushroom cap with the mixture and place on a baking sheet lined with parchment paper.
  6. Bake for about 20 minutes or until golden brown on top. Serve hot.
