  • 200g beef sirloin or tenderloin, cut into cubes
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1 cup snow peas
  • 1 onion, chopped
  • 1 tbsp soy sauce
  • 1 tsp garlic, minced
  • 1 cup cooked rice (preferably day-old)
  • 1 egg, lightly beaten
  • Vegetable oil, salt & pepper to taste

Instructions

  1. Season beef cubes with salt and pepper. Heat vegetable oil in a wok over high heat; sear beef for 2-3 minutes until browned but tender. Remove and set aside.
  2. In the same pan, stir-fry garlic and onion for a minute before adding broccoli, carrots, and snow peas. Cook for 3-4 minutes until tender-crisp; add soy sauce.
  3. In another pan, heat vegetable oil over medium-high heat. Stir-fry diced carrots and corn for 2 minutes. Push aside; scramble egg until cooked through, then mix in rice and soy sauce; stir-fry for another 3 minutes.
  4. Plate fried rice next to stir-fried vegetables topped with beef cubes.
