  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked chicken or turkey sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • fresh thyme leaves

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Toss the butternut squash cubes with olive oil, salt, and pepper; roast on a baking sheet for 15-20 minutes until tender.
  3. Meanwhile, toss Brussels sprouts with olive oil, salt, and pepper; roast on a separate baking sheet for 20-30 minutes until caramelized.
  4. Cook bow tie pasta in boiling salted water until al dente; drain while reserving some water.
  5. In a skillet over medium heat, brown sliced sausage in olive oil before removing it from the skillet.
  6. Sauté minced garlic in the same skillet; add butter until melted.
  7. Combine pasta with reserved water; season with salt, pepper, and smoked paprika.
  8. Gently fold in roasted vegetables and sausage; mix well before serving.
