  • 2 lamb shanks
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 3 large carrots, cut into chunks
  • 2 celery stalks, chopped
  • 2 tbsp tomato paste
  • 1 cup apple vinegar
  • 2 cups beef stock
  • Fresh thyme sprigs

Instructions

  1. Season lamb shanks with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat, sear the shanks on all sides until browned, then set aside.
  2. In the same pot, sauté onions until translucent. Add minced garlic; stir until fragrant. Add carrots and celery; cook for about 5 minutes.
  3. Stir in tomato paste, then gradually add apple vinegar while scraping the bottom of the pot to incorporate flavors.
  4. Return lamb shanks to the pot, pour in stock until halfway covered, add thyme sprigs, and bring to a gentle simmer.
  5. Cover with a lid, reduce heat to low, and let cook for 2-3 hours until lamb is tender.
  6. Remove from heat and let rest briefly before serving alongside vegetables.
