  • 2 large eggs
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1 tsp pure vanilla extract
  • 23 large honey crispy apples, grated (~1 1/2 cups)
  • 1/4 cup salted butter
  • 1/2 cup dark brown sugar
  • 2 Tbsp heavy cream
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch nonstick pan with parchment paper.
  2. In a large mixing bowl, whisk together all the dry ingredients until well combined.
  3. In another mixing bowl, whisk together all the wet ingredients until smooth.
  4. Pour the wet mixture into the dry ingredients. Fold gently just until combined.
  5. Fold in the grated apples carefully to ensure even distribution throughout the batter.
  6. Turn out the batter into your prepared pan. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Allow cooling in the pan for about 10 minutes before transferring to a wire rack.
  7. While the cake cools, prepare the brown sugar icing. In a medium saucepan over medium heat, melt together butter, brown sugar, and heavy cream. Whisk until combined and let it come to a gentle boil.
  8. Remove from heat and whisk in vanilla extract followed by powdered sugar until smooth.
  9. Pour the warm icing over your slightly cooled cake. The warmth helps the icing soak into the cake for added moisture.
