  • 175 g unsalted butter (softened)
  • 175 g light brown soft sugar (for cupcake sponge)
  • 3 large eggs
  • 175 g self-raising flour
  • 1/2 tsp cinnamon (for cupcake sponge)
  • 1/4 tsp mixed spice (for cupcake sponge)
  • 175 g unsalted butter (softened, for buttercream)
  • 350 g icing sugar
  • 1 1/2 tsp cinnamon (for buttercream)
  • 23 tbsp milk

Instructions

  1. Prepare the apple filling by cooking chopped apples with sugar, cornflour, and spices until soft. Cool.
  2. For the crumble topping, mix flour, sugar, and cinnamon; combine with butter until crumbly. Bake until golden.
  3. Make the cupcake batter by creaming butter and sugar, then adding eggs followed by folding in flour and spices. Bake in cupcake cases.
  4. Once cooled, fill each cupcake with apple filling and frost with cinnamon buttercream.
