  • ⅓ cup packed brown sugar (for streusel)
  • ¼ cup old-fashioned oats (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • ¼ teaspoon salt (for streusel)
  • ¼ cup cold unsalted butter (cubed, for streusel)
  • 8 oz cream cheese (softened, for frosting)
  • ¼ cup unsalted butter (softened, for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, combine flour, brown sugar, oats, cinnamon, and salt for the streusel topping. Cut in the cold butter until crumbly. Refrigerate.
  3. In another medium bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. In a large bowl, cream softened butter and sugar until fluffy. Add eggs one at a time and then mix in vanilla.
  5. Gradually combine wet and dry ingredients with milk until just mixed; fold in diced apples gently.
  6. Fill muffin cups 2/3 full with batter and top with streusel. Bake for 22-25 minutes until golden.
