  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 medium apples, peeled, cored, and diced

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time and then stir in vanilla extract.
  4. Gradually mix dry ingredients into the wet ingredients while alternating with sour cream until just combined. Fold in diced apples gently.
  5. Pour half of the batter into the prepared pan and sprinkle with half of the cinnamon-sugar mixture. Layer remaining batter on top and finish with the rest of the cinnamon-sugar mixture.
  6. Bake for 50-60 minutes or until a toothpick comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
